Urban Cowboy Beef Stroganoff

1 1/2 lb. beef loin top sirloin steak, boneless
2 cups sliced mushroom
3 Tbls butter
1 shallot
1/4 bay leaf
3/4 cup sherry
2 Tbls cornstarch
1 cup (or 10 oz) condensed beef broth
1/2 tsp salt
1 cup sour cream
1 Tbls chopped parsley
Salt and pepper

Broil steak rare, cool, cut into strips

Sauté mushrooms in butter
-
Add shallot, bay leaf, sherry

Boil 5 minutes until wine is reduced in volume by 1/2

Remove bay leaf

Stir cornstarch into a little broth

Turn remaining broth over mushroom

Add cornstarch mixture, and cook.

Stir until sauce boils thoroughly and thickens
-
Add salt and pepper
-
Just before serving, reheat sauce then stir in sour cream and parsley

Heat until simmering

Add steak strips and heat
-
