1 1/2 lb. beef loin top sirloin steak, boneless

2 cups sliced mushroom

3 Tbls butter

1 shallot

1/4 bay leaf

3/4 cup sherry

2 Tbls cornstarch 

1 cup (or 10 oz) condensed beef broth

1/2 tsp salt

1 cup sour cream

1 Tbls chopped parsley

Salt and pepper

  1. Broil steak rare, cool, cut into strips

  2. Sauté mushrooms in butter

  3. Add shallot, bay leaf, sherry

  4. Boil 5 minutes until wine is reduced in volume by 1/2 

  5. Remove bay leaf

  6. Stir cornstarch into a little broth

  7. Turn remaining broth over mushroom

  8. Add cornstarch mixture, and cook.

  9. Stir until sauce boils thoroughly and thickens

  10. Add salt and pepper

  11. Just before serving, reheat sauce then stir in sour cream and parsley

  12. Heat until simmering

  13. Add steak strips and heat
